
Hi, I have made this 'Healthy Banana Bread (Whole Wheat)' recipe a bunch of times. It is from the blog 'Sally's Baking Addiction'.
I usually make a few changes based on personal preference:
- replace the applesauce with 'dark roasted crunchy peanut butter' in equal quantity.
- replace milk with soy milk
- replace the walnuts with pecans.
- add two tablespoons of linseed meal.
I decided to make it into muffins instead one day because I was going to gift it to someone and muffins seemed more manageable than a cake in that situation.
Recipe is still the same, but you just spoon it out into a muffin tray, and drop the baking time down from 60 mins+ to 20-25 mins at the same temperature (175°C/350°F). I also place three whole pecans on top for decoration (despite the photo provided only having two, lmao).
The taste is not super sweet and the use of wholemeal flour makes it feel more filling without a sugary overload :)
