Hi, this post is about on of my all time favourite recipes sources; Chef JJ's Kitchen, or Mohammed Moosa. He is a Palestinian man (from Nablus I think) who lives in Oman and posts cooking videos on Instagram & Youtube. The recipes are primarily Palestinian and Levantine (Lebanese, Syrian, Jordanian), but he also does recipes a variety from cuisines across West, South, & Central Asia, and North & East Africa. Everything I have made from his recipes has been fantastic, several of them have become regular staples for me. So I will just link to his social pages and to the videos of recipes I have personally made from him.
The bulk of his recipes are on Instagram, I have linked directly to reels from there because that site prevents you from seeing an entire profile without logging in.

Yemeni White Beans recipe - Youtube
This is my absolute favourite breakfast dish ever. A butter bean, tomato, onion & chilli breakfast dish, with warming spices, covered in a layer of 'liquid cheese', served with flatbread. I just use 'smooth ricotta' instead of the liquid cheese from the recipe, because I don't have access to that. He also suggests creamcheese as a substitute.
Mufarrakat Batata recipe - Instagram
Also spelt Mfarakeh/Marraka. This is a potato, onion and egg breakfast dish with lots of black pepper, served with flatbread. Probably my second favourite breakfast dish.
Tomato and egg breakfast dish, with onion and chilli, served with flatbread. Can be altered to personal taste easily.
Za'atar Omelette recipe - Youtube
A really simple omelette recipe with za'atar mixed into the eggs, folded with cheese. Goes well with pomegranate molasses or even chilli sauce.
Za'atar Muffins recipe - Instagram
I think these are an original creation of his, a savoury muffin with za'atar mixed in. Served warm with olive oil for dipping, or yoghurt. It is a take on the popular Levantine breakfast of dipping fresh khubz flatbread into olive oil/za'atar mix
A simple zucchini, onion & tomato dish with lots of black pepper, served with flatbread. Really quick all vegetable lunch.
Staple Levantine dish of lentils & rice, served with a tomato/mint/garlic salsa, yoghurt, and fried onions mixed through.
Salata Aswat recipe - Instagram
This is a Sudanese 'Eggplant Salad' dish. A really nice stewed mix of well cooked eggplant, chilli, garlic, tomato, peanut butter, yoghurt & lemon juice, served with flatbread. Very nutty and creamy, kind of similar to satay. The eggplants soak up a lot of oil during cooking, I often just precook them in the oven for a bit to make sure they are very soft (which he suggests via air fryer).
Damset Adas recipe - Instagram
This is my favourite food. An ancient Gazan lentil and tahini stew, with dagga (chilli, lemon, garlic sauce) mixed through, served with flatbread. It is a really warming dish.
Palestinian Lentil Soup recipe - Instagram
Another really nice and warming dish of red lentils and onion stewed, then baked in a pot on top of flatbread.

This one is a bit more involved than the others; a bone in chicken and spiced rice dish finished in a pot together.
